  • 8 oz. cream cheese
  • 1 c. shredded carrots
  • 2 Tbsp. lemon juice

Tips & Substitutions

For a twist, consider substituting the unpared apples with pears for a different flavor profile. You can also replace the orange gelatin with peach or pineapple gelatin for variety. If you're looking to reduce sugar, experiment with a sugar substitute that measures like sugar. Ensure the cream cheese is softened for easier blending, which will help achieve a smooth texture.

Serving Suggestions

This colorful carrot salad is perfect as a side dish for holiday gatherings or summer picnics. It pairs beautifully with Cecil'S Stew or a simple grilled chicken. For an added crunch, serve alongside toasted nuts or seeds. Garnish with fresh mint leaves or additional fruit sections for an appealing presentation.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. If the salad seems too firm upon serving, let it sit at room temperature for a few minutes to soften slightly before serving. Avoid freezing as it may alter the texture of the gelatin and cream cheese.

Frequently Asked Questions

Can I use fresh carrots instead of shredded carrots?

Yes, you can use fresh carrots by grating them yourself. This will give a fresher taste and crunch to the salad. Just ensure that they are finely grated so they mix well with the other ingredients.

How long does it take for the salad to set?

The salad usually takes about 4-6 hours to set fully in the refrigerator. For best results, prepare it a day in advance, allowing it plenty of time to chill and firm up.

Can I make this salad vegan?

To make this salad vegan, substitute the cream cheese with a plant-based cream cheese alternative. Use agar-agar or a vegan gelatin substitute in place of the orange gelatin to maintain the gelatinous texture while keeping it vegan-friendly.
