Ingredients

  • 3 well beaten eggs
  • 1 1/4 cups sugar
  • 1 teaspoon grated lemon peel
  • 1/3 cup freshly squeezed lemon juice

Instructions

  1. Mix the eggs, sugar, grated lemon peel, and lemon juice in a microwave container.
  2. Cook for 1 minute on High in the microwave; stir with a whisk.
  3. Continue cooking 1 minute, stirring until the mixture turns a little clear and bubbles evenly.
  4. Pour the lemon curd into jars.
  5. Chill the jars in the refrigerator.
  6. Keep refrigerated.
