Ingredients

  • 1 cup butter
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 2 1/4 cups flour
  • 4 eggs
  • 2 cups sugar
  • 1/4 cup lemon juice
  • grated lemon rind to taste

Instructions

  1. Cream together powdered sugar, butter, salt, and 2 cups of flour.
  2. Press the mixture into a 9 x 13-inch pan that has been sprayed with Pam.
  3. Bake for 25 minutes at 325°F (163°C).
  4. In a separate bowl, combine eggs, sugar, lemon juice, and grated lemon rind.
  5. Pour the lemon mixture over the baked crust.
  6. Bake for an additional 20-25 minutes until set.
  7. Allow to cool before cutting into bars.
