Ingredients

  • 1 broiler fryer chicken (2 1/2 to 3 lb.)
  • salt
  • pepper
  • 1/4 cup butter or margarine
  • 1/2 teaspoon leaf tarragon, crumbled
  • 12 medium-sized whole mushrooms
  • 1 cup celery pieces (1-inch)

Instructions

  1. Heat oven to 325°F (160°C).
  2. Wash and dry the chicken.
  3. Sprinkle cavities lightly with salt and pepper.
  4. Melt butter or margarine in a Dutch oven or large, heatproof casserole.
  5. Brown the chicken on all sides in the melted butter.
  6. Sprinkle the tarragon over the chicken.
  7. Cover the casserole and roast the chicken for 30 minutes.
  8. Add the mushrooms and celery to the casserole.
  9. Roast for an additional 30 minutes or until the chicken is tender.
