Ingredients

  • 2 lb. spinach
  • 1/2 c. olive oil
  • 1 glove chopped garlic
  • 1/4 c. pine nuts

Instructions

  1. Blanch the spinach, then squeeze out excess water and chop.
  2. Heat olive oil in a pan. Add chopped garlic and pine nuts, cooking until fragrant.
  3. Add the chopped spinach and season with salt and pepper. Cook on low heat for 5 to 10 minutes.
