Cauliflower Pasta

Ingredients

  • 2 lb. cauliflower, broken into flowerets
  • 4 cloves garlic, crushed
  • 1 c. olive oil
  • 3 pt. water
  • 1 1/2 Tbsp. salt
  • 1 Tbsp. black pepper
  • 1 lb. pasta (vermicelli), broken in half
  • 2 Tbsp. parsley
  • 1 1/2 c. Parmesan cheese

Instructions

  1. In a large pot, saute garlic in oil. Do not let it brown. Pour in water, salt and pepper. Bring to a boil. Toss in cauliflower flowerets and pasta. Cook al dente.
  2. Add parsley and cheese. Allow to sit 1 minute before serving.
  3. Stir well to mix melted cheese throughout pasta.
