- Heat water, milk, and margarine until combined and warm.
- Cool the mixture to room temperature.
- Add beaten eggs, salt, baking powder, and grated potatoes to the cooled mixture.
- Gradually add flour and knead the dough well until smooth and elastic.
- Keep the dough covered and rest for a short period if desired.
- Roll out 1/8 of the dough on a lightly floured surface to pencil thickness.
- Cut the rolled dough into 1-inch pieces.
- Allow the cut pieces to dry on a lightly floured board for about 4 hours.
- Cook the cavetelli in boiling water until they rise to the surface, or freeze for future use.
