- Prepare an 8-inch spring-form pan by covering the bottom with aluminum foil and lining the sides with plastic wrap.
- Spread one package (8 ounces) of cream cheese on the bottom of the pan.
- Sprinkle chopped green onions over the cream cheese.
- Combine chopped hard-boiled eggs with mayonnaise and spread gently over the onions.
- Combine the remaining cream cheese with sour cream and spread gently over the egg mixture.
- Cover with plastic wrap and chill overnight.
- To serve, release the spring-form and place the pie on the foil-covered spring-form bottom onto a serving dish.
- Just before serving, spread black caviar over the cream cheese and sour cream layer. Serve with crackers.
