- Clean the celery and separate the branches.
- Blend together the softened cream cheese with the crumbled Roquefort cheese.
- Add mayonnaise to the cheese mixture to achieve spreading consistency and season with a dash of Worcestershire sauce.
- Fill the celery branches with the cheese mixture.
- Press the filled branches back into the original stalk form.
- Roll the filled celery in waxed paper and chill overnight in the refrigerator.
- Just before serving, slice the celery crosswise to form pinwheels.
- Arrange the pinwheels on crisp lettuce for serving.
