Celery Pinwheels

Crisp celery stalks filled with a rich, tangy cheese mixture, then rolled and chilled to create elegant pinwheels perfect for parties or light appetizers.

Ingredients

  • 1 medium stalk celery
  • 1 (3 oz.) pkg. cream cheese
  • 2 Tbsp. crumbled Roquefort cheese
  • mayonnaise
  • Worcestershire sauce

Instructions

  1. Clean the celery and separate the branches.
  2. Blend together the softened cream cheese with the crumbled Roquefort cheese.
  3. Add mayonnaise to the cheese mixture to achieve spreading consistency and season with a dash of Worcestershire sauce.
  4. Fill the celery branches with the cheese mixture.
  5. Press the filled branches back into the original stalk form.
  6. Roll the filled celery in waxed paper and chill overnight in the refrigerator.
  7. Just before serving, slice the celery crosswise to form pinwheels.
  8. Arrange the pinwheels on crisp lettuce for serving.
