Celery Shrimp Bisque

Ingredients

  • 2 cups peeled diced potatoes
  • 2 cups chopped celery
  • 2 cups water
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups half-and-half
  • 1/4 cup flour
  • 1 lb medium shrimp, cleaned
  • 1/4 cup butter
  • 1/2 teaspoon celery salt

Instructions

  1. Combine first 6 ingredients in a large dutch oven.
  2. Bring to a boil, cover and simmer 10 minutes.
  3. Mix flour and half-and-half in small bowl.
  4. Add to potatoes, stirring well.
  5. Add shrimp.
  6. Add butter and celery salt.
  7. Cook on medium until thick and bubbly.
  8. Stir in sherry.
