Celery Vichyssoise

Ingredients

  • 1 onion
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 cups chicken broth or 3 cups vegetable broth
  • 2 potatoes
  • 1 bunch celery
  • 1 cup milk
  • fresh ground pepper

Instructions

  1. Saute 1 chopped onion in 1 T butter until softened, about 5 minute.
  2. Stir in 1 T flour.
  3. Stir in chicken or Vegetable broth which ever you are using and fresh ground black pepper.
  4. Add 2 cubed peeled potatoes and 1 bunch sliced celery, about 6 cups.
  5. Bring to a boil. Cover and simmer, from 20 - 25 minutes.
  6. Puree in a food processor or blender.
  7. Reheat with 1 cup milk.
  8. Serves 4 - 6.
