Celestial Potato Soup

Ingredients

  • 2 medium potatoes, peeled and diced
  • 2 carrots, grated
  • 1 rib celery, finely chopped
  • 1 turnip, peeled and diced
  • 3 Tbsp. minced onion
  • 1 Tbsp. dried vegetable flakes
  • salt and pepper to taste
  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 1 1/2 c. milk
  • 1 1/2 c. sour cream

Instructions

  1. Combine potatoes, carrots, celery, turnip, onion, vegetable flakes, salt and pepper; cover with water and simmer 30 minutes. In another saucepan, melt butter and stir in flour; add a small amount of liquid from potato mixture to form a paste.
  2. Cool and stir in milk and sour cream.
  3. When vegetables are cooked, mash or puree them and add flour and milk mixture.
  4. Do not boil.
  5. Serve; sprinkle with bacon.
  6. Serves 6.
