Ingredients

  • 2 lb. ground beef
  • 1 small can tomatoes with chilies
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 2 pkg. flat, crisp tortillas
  • 1 can refried beans
  • green onions, chopped (for serving)
  • tomatoes, chopped (for serving)

Instructions

  1. Brown the ground beef and chopped onion together in a skillet.
  2. Add the tomatoes with chilies and seasonings; simmer until the meat is cooked through.
  3. Heat the flat, crisp tortillas according to package instructions.
  4. Chop the green onions, tomatoes, and lettuce into small pieces.
  5. Serve the beef mixture on the tortillas with chopped vegetables, grated cheese, and optional toppings like guacamole, sour cream, and hot sauce.
  6. Allow each person to assemble their own chalupas.
