Ingredients

  • 1 envelope unflavored gelatin
  • 1 cup cold water
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 cup mandarin juice
  • 3 egg whites
  • 1 cup heavy cream
  • 1 (11 oz.) can mandarins

Instructions

  1. Sprinkle gelatin over 1/4 cup cold water and let soften for 5 minutes.
  2. Mix sugar, 3/4 cup water, lemon juice, and mandarin juice together in a pan, add gelatin and heat, stirring until gelatin dissolves.
  3. Chill until just barely thick, then beat until frothy.
  4. Beat egg whites until stiff but not dry, then fold into the gelatin mixture.
  5. Whip the heavy cream to soft peaks and fold into the mixture.
  6. Line a 2-quart mold with drained mandarin sections, spoon in the Charlotte mixture, and chill.
  7. Unmold before serving.
