Ingredients

  • 1 chocolate crumb crust
  • 2 c. powdered sugar
  • 1/2 lb. unsalted butter, soft
  • 4 eggs
  • 4 oz. unsweetened chocolate, melted and cooled
  • 1/4 tsp. mint extract
  • 1/4 tsp. vanilla extract

Instructions

  1. Beat powdered sugar with softened unsalted butter in a large bowl until smooth.
  2. Add eggs, one at a time, beating well after each addition.
  3. Stir in melted and cooled unsweetened chocolate.
  4. Add mint extract and vanilla extract, mixing well.
  5. Pour the chocolate mint filling into the chocolate crumb crust.
  6. Refrigerate until the pie is firm.
  7. Garnish with mint leaves and maraschino cherries before serving.
