Ingredients

  • 1 larded beef tenderloin
  • 1/2 cup dry white wine
  • 1 tablespoon meat extract
  • 1 shallot or green onion
  • 1 tablespoon butter
  • 1 teaspoon tarragon
  • a pinch of cayenne pepper
  • 1/2 teaspoon lemon juice

Instructions

  1. Bake the larded beef tenderloin in a flat, foil-lined pan for 45 minutes in a 450°F oven.
  2. Remove the string and larding from the beef.
  3. Slice the beef and pour the prepared sauce over the meat.
