Ingredients

  4. Lift out the onion with a slotted spoon and add to the bacon in the bowl.
  5. Discard the bacon fat.
  6. Add the boiled, cooled, and peeled potatoes, hard-cooked eggs, cheddar cheese cubes, mayonnaise, and mustard to the bacon and onion.
  7. Stir until evenly mixed.
  8. Season with salt and pepper.
  9. Serve immediately or cover and chill overnight.
