- Place one vanilla wafer in the bottom of each muffin liner.
- Combine the softened cream cheese, eggs, sugar, lemon juice, and vanilla until smooth.
- Add the mixture to the muffin liners on top of the vanilla wafers.
- Bake for 35 minutes at 325°F.
- Allow to cool, then freeze for future use if desired.
- When ready to serve, top with your favorite pie filling.
