Creamy cheese muffin bites with a crunchy vanilla wafer base, topped with pie filling, perfect for dessert or snack occasions, and suitable for gatherings or casual treats.

Ingredients

  • vanilla wafers
  • 2 (8 oz.) packages cream cheese, softened
  • 2 eggs
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla

Instructions

  1. Place one vanilla wafer in the bottom of each muffin liner.
  2. Combine the softened cream cheese, eggs, sugar, lemon juice, and vanilla until smooth.
  3. Add the mixture to the muffin liners on top of the vanilla wafers.
  4. Bake for 35 minutes at 325°F.
  5. Allow to cool, then freeze for future use if desired.
  6. When ready to serve, top with your favorite pie filling.
