Ingredients

  • 1 box vanilla wafers
  • 2 (8 oz.) packages cream cheese, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 can cherry pie filling

Instructions

  1. Place a vanilla wafer in the bottom of each foil baking cup.
  2. Mix softened cream cheese, sugar, vanilla, and eggs until well combined.
  3. Pour the mixture over the wafers in the baking cups, filling about half to three-quarters full.
  4. Bake at 320°F (160°C) for 20 minutes.
  5. Refrigerate the cheesecakes until set.
  6. Add 1 tablespoon of cherry pie filling on top of each cheesecake before serving.
  7. Keep refrigerated until ready to serve.
