Ingredients

  • 2 lb. Ricotta cheese
  • 2 eggs
  • 1 tsp. salt
  • 3 c. flour
  • 1/2 c. grated cheese

Instructions

  1. Beat eggs, ricotta cheese, and grated cheese together.
  2. Add salt and gradually incorporate flour into the mixture.
  3. Knead until the dough is smooth and cohesive.
  4. Cut the dough into small pieces and shape into gnocchi.
  5. Boil salted water and cook gnocchi in it for about 20 minutes until they float.
  6. Drain the cooked gnocchi and serve with red sauce or butter and grated cheese.
