Cheese-Tomato Bake

Ingredients

  • 4 medium tomatoes, peeled
  • 1 tsp. sugar
  • dash of pepper
  • 8 oz. sharp cheese, shredded
  • 1/2 c. finely chopped celery
  • 1/4 c. finely chopped onion
  • 1 c. soft bread crumbs
  • 2 Tbsp. butter, melted

Instructions

  1. Preheat oven to 350°.
  2. Slice tomatoes into fourths; sprinkle with sugar and pepper.
  3. In bowl, toss together cheese, celery and onion.
  4. Place half of the tomato slices into a greased 10 x 6 x 1 3/4-inch baking dish.
  5. Sprinkle on half of the cheese mixture over tomato slices.
  6. Repeat layers.
  7. Toss crumbs with butter; sprinkle over casserole mixture.
  8. Bake for 25 to 30 minutes.
  9. Serves 6.
