Ingredients

  • 2 (8 oz.) cream cheese
  • 3/4 c. sugar
  • 1 Tbsp. lemon juice
  • 2 eggs, beaten
  • 1 tsp. vanilla

Instructions

  1. Beat the cream cheese until smooth.
  2. Add the rest of the ingredients and beat until smooth.
  3. Put a vanilla wafer cookie in bottom of cupcake tins lined with papers.
  4. Fill 2/3 full with mixture.
  5. Bake at 375° for 15 to 20 minutes.
  6. Cool and top with pie filling when ready to serve.
  7. Makes 14 to 16 cupcakes.
