Ingredients

  • 1/2 cup dried apricots
  • 1 tablespoon sugar
  • 1 (3 oz.) cream cheese
  • 1/2 cup low-fat sour cream
  • 1/8 teaspoon nutmeg
  • fruit dippers: try strawberries, melons, apples, bananas and mangos

Instructions

  1. Simmer apricots in 1 cup water.
  2. Cover and cook for 15 minutes or until tender.
  3. Drain apricots, reserving 1/4 cup of liquid.
  4. In a processor or blender, combine apricots with reserved liquid and sugar, blend until smooth.
  5. Add cream cheese, sour cream, and nutmeg.
  6. Blend until smooth, then cover and chill.
