Ingredients

  • 2 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 (20 oz.) can crushed pineapple, undrained
  • 1 (3 oz.) package lemon flavored gelatin
  • 1 teaspoon lemon juice
  • 1 (8 oz.) package cream cheese, softened
  • 1/2 cup sugar
  • 1 (8 oz.) container frozen whipped topping, thawed

Instructions

  1. Combine the graham cracker crumbs and melted butter.
  2. Reserve 1/2 cup of the crumb mixture.
  3. Firmly press the remaining crumb mixture into a 13 x 9 x 2-inch baking dish.
  4. In a mixing bowl, combine the crushed pineapple with its juice, lemon flavored gelatin, and lemon juice.
  5. In a separate bowl, beat the softened cream cheese with sugar until smooth.
  6. Mix the cream cheese mixture into the pineapple mixture.
  7. Fold in the thawed whipped topping until well combined.
  8. Sprinkle the reserved crumb mixture over the top of the dessert.
  9. Refrigerate for at least 2 hours before serving.
