Ingredients

  • 10 slices slightly stale white bread
  • 1/3 cup butter
  • 4 eggs
  • 3 cups milk
  • 1 1/3 teaspoons salt
  • 1 teaspoon dry mustard
  • 2 cups sharp cheese, grated

Instructions

  1. Trim the crust off the bread and cut each slice into 4 pieces.
  2. Butter each bread piece.
  3. Grease a souffle dish.
  4. Layer the bread and grated cheese in the dish, starting with cheese at the bottom and alternating layers, ending with bread on top.
  5. In a separate bowl, combine eggs, milk, salt, and dry mustard.
  6. Pour the egg mixture over the layered bread and cheese.
  7. Refrigerate the dish overnight or for at least 6 hours.
  8. Bring the dish to room temperature before baking.
  9. Bake at 325°F (160°C) for 40 minutes until the top is risen and golden.
  10. Remove from oven; note that the mixture will fall after baking.
