- Separate the eggs into yolks and whites.
- Beat the egg yolks until pale.
- Add sugar, one tablespoon at a time, and beat after each addition.
- Stir in the bourbon and rum.
- Refrigerate the mixture a day ahead if desired.
- Just before serving, whip the cream and fold it into the egg mixture.
- Beat the egg whites until stiff, then fold into the mixture.
