Cheesy Stuffed Eggplant

Ingredients

  • 2 small eggplants
  • 1/2 lb. ground beef
  • 3 cloves garlic
  • 3 Tbsp. oil
  • 1 onion, finely chopped
  • 3/4 c. fresh parsley
  • 1 tsp. salt
  • 1 tomato
  • 1/2 tsp. whole oregano
  • 1 c. water
  • 1/4 lb. Cheddar cheese

Instructions

  1. Wash eggplants; cut in halves lengthwise.
  2. Remove pulp, leaving a 1/4 inch shell; set shells aside.
  3. Cut pulp into 1/2 inch cubes.
  4. Saute eggplant, beef, onion, tomato and garlic until beef is browned and onion is tender.
  5. Stir in parsley, salt, pepper and oregano.
