Cheesy Stuffed Eggplant
Ingredients
Instructions
- Wash eggplants; cut in halves lengthwise.
- Remove pulp, leaving a 1/4 inch shell; set shells aside.
- Cut pulp into 1/2 inch cubes.
- Saute eggplant, beef, onion, tomato and garlic until beef is browned and onion is tender.
- Stir in parsley, salt, pepper and oregano.
