Cheesy Zucchini Bread

Ingredients

  • 13 oz zucchini (about 2 medium), coarsely grated
  • 3 slices bacon, finely chopped (optional)
  • 1 None large onion, finely chopped
  • 1 1/4 cup self-rising flour
  • 5 None large eggs, lightly beaten
  • 1 cup shredded cheese, such as cheddar or Monterey Jack
  • 1/4 cup rice bran oil
  • 1/2 None tomato, sliced
  • None None Sliced smoked salmon or ham, to serve

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9-by-5-inch loaf pan. Line base and two long sides with parchment.
  2. Combine all ingredients except tomato in a bowl and season to taste. Spoon into prepared pan and top with tomato slices. Bake for 40 mins, until a skewer inserted comes out clean. Remove from oven and leave to rest in pan for 5 mins. Invert onto a wire rack to cool slightly.
  3. Serve warm or cooled with smoked salmon or ham.
