Cherry Cheesecake Miniatures

Ingredients

  • 2 (8 oz.) pkg. cream cheese, softened
  • 3/4 c. sugar
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 24 vanilla wafers
  • cherry pie filling

Instructions

  1. Beat softened cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
  2. Line muffin tins with cupcake liners and place vanilla wafer in bottom of each liner.
  3. Fill 2/3 full of cream cheese mixture.
  4. Bake at 350° for 15 to 20 minutes or until set.
  5. Let cool.
  6. Top with about 1 tablespoon cherry pie filling.
  7. Chill.
