Ingredients

  • 1 cup enriched flour
  • 1 teaspoon baking powder
  • 1/4 cup shortening
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 to 2 cups pie cherries, drained

Instructions

  1. Sift flour, salt, baking powder, and 1/2 cup sugar into a bowl. Add shortening, milk, and vanilla. Beat with a spoon or mixer until smooth.
  2. Pour the batter into a greased 6 x 10-inch pan.
  3. Spread drained cherries evenly over the batter and sprinkle with 1/4 or 1/2 cup sugar.
  4. Heat the drained cherry juice until hot, then pour the hot liquid over the cherries.
  5. Bake at 375°F (190°C) for about 40 minutes until golden and bubbly.
  6. Serve warm with plain whipped cream or ice cream.
