Cherry Pineapple Relish

Ingredients

  • 1/4 cup cherries, dried
  • 1/4 cup canned pineapple chunk
  • 1/4 cup red onion, diced
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth

Instructions

  1. Dice one red onion.
  2. Heat olive oil in a saute pan over medium-high heat. Saute dried cherries, pineapple and diced red onion until the onion is soft.
  3. Add chicken broth, reduce heat and saute until the pan is almost dry (this will reconstitute the cherries).
  4. Serve warn.
