Cherry Upside Down Pudding

Ingredients

  • 2 Tbsp. butter
  • 1 c. sugar
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 3/4 c. milk
  • 1 1/2 c. sour cherries, drained (or 1 can cherries)
  • 1/4 c. cherry juice

Instructions

  1. Cream together butter and sugar.
  2. In a separate bowl, sift together flour, baking powder and salt.
  3. Add milk and dry ingredients alternately to butter/sugar mixture; mix well.
  4. Pour into a greased 8 x 8-inch pan.
  5. Combine cherry juice and sugar in pan and heat until sugar dissolves; add cherries.
  6. Spread this over batter.
  7. Bake at 350° for 30 to 40 minutes until golden brown.
  8. Very good!
