Ingredients

  • 1 lb. chestnuts
  • 2 c. milk
  • 6 Tbsp. butter
  • 1 c. sugar
  • 6 eggs
  • 3/4 c. grated almonds

Instructions

  2. Roast the chestnuts in a preheated 350°F (175°C) oven for about 15 minutes.
  3. Peel the roasted chestnuts.
  4. Cook the peeled chestnuts in 2 cups of milk for about 30 minutes.
  5. Rub the cooked chestnuts through a strainer while hot, adding any remaining liquid from cooking to the puree, reserving 1/4 cup of chestnuts for decorating the cake.
  6. Cream butter and sugar together until light and fluffy.
  7. Separate the eggs; beat the egg whites until stiff peaks form.
  8. Mix the chestnut puree with the grated almonds and incorporate into the creamed butter and sugar.
  9. Gently fold in the beaten egg whites.
  10. Pour the batter into a prepared cake pan and bake at 350°F (175°C) for about 45 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow to cool, then decorate with the reserved chestnuts.
