Coconut Date Krispies are chewy, sweet treats combining chopped dates, rice Krispies, nuts, and coconut for a delightful snack or dessert suitable for all ages.

Ingredients

  • 8 oz chopped dates
  • 1 cup sugar
  • 1 beaten egg
  • 1 stick butter
  • 1 teaspoon vanilla
  • 2 cups Rice Krispies
  • 1/2 cup chopped nuts
  • flaked coconut

Instructions

  1. Cook dates, sugar, beaten egg, and butter on top of a double boiler for 15 minutes, stirring constantly.
  2. Remove from stove and add vanilla, Rice Krispies, and chopped nuts.
  3. Form into balls and roll in shredded coconut.
  4. Refrigerate until firm and ready to serve.
