Chevre & Pesto Toasts
Ingredients
- All measures are to your personal taste.
- A fresh French baguette sliced into 1/4 inch thick rounds.
- Good quality soft chevre cheese, enough for about a Tablespoon of cheese on each toast. ⓘ
- Bottled bright green or fresh basil pesto ⓘ
- Bottled roasted red peppers cut into 1/4 inch wide strips about as long as the diameter of your toasted baguette rounds. (I think bottled peppers work better than freshly roasted ones. They are more pliable.)
Instructions
- Toast the slices of baguette under your broiler at low heat. Careful! They can burn quickly. Turn and toast on the other side.
- Shortly before your guests arrive, place about 3/4 Tablespoon of chevre on each toast.
- Then place two strips of roasted red pepper in a cross pattern on top of the mound of chevre.
- Drizzle some pesto at the center of your crossed peppers.
- Add 5-6 toasted pine nuts and lightly press into the cheese and pesto to keep from falling off.
