Chevre & Pesto Toasts

Ingredients

  • All measures are to your personal taste.
  • A fresh French baguette sliced into 1/4 inch thick rounds.
  • Good quality soft chevre cheese, enough for about a Tablespoon of cheese on each toast.
  • Bottled bright green or fresh basil pesto
  • Bottled roasted red peppers cut into 1/4 inch wide strips about as long as the diameter of your toasted baguette rounds. (I think bottled peppers work better than freshly roasted ones. They are more pliable.)

Instructions

  1. Toast the slices of baguette under your broiler at low heat. Careful! They can burn quickly. Turn and toast on the other side.
  2. Shortly before your guests arrive, place about 3/4 Tablespoon of chevre on each toast.
  3. Then place two strips of roasted red pepper in a cross pattern on top of the mound of chevre.
  4. Drizzle some pesto at the center of your crossed peppers.
  5. Add 5-6 toasted pine nuts and lightly press into the cheese and pesto to keep from falling off.
