Ingredients

  • 1/2 cup margarine
  • 1/4 cup powdered sugar
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 8 oz. Neufchatel cheese
  • 1 teaspoon vanilla
  • 3 fresh apples, sliced
  • 16 oz. Mandarin oranges
  • 20 oz. can pineapple
  • 1/4 pound fresh blueberries
  • 1/4 pound green grapes
  • 2 tablespoons cornstarch
  • 1 cup juice from fruit plus water
  • 1/2 cup granulated sugar

Instructions

  1. Mix margarine and powdered sugar until smooth.
  2. Add all-purpose flour to the mixture and blend to form a dough.
  3. Press the dough into a baking pan and bake until lightly golden, about 10 minutes. Cool completely.
  4. In a saucepan, combine Neufchatel cheese, vanilla, granulated sugar, cornstarch, and fruit juice with water. Cook until thickened. Cool.
  5. Spread the cooled cheese mixture over the baked crust.
  6. Arrange sliced apples, mandarin oranges, pineapple, blueberries, and green grapes on top of the cheese layer.
  7. Pour the thickened fruit juice mixture over the arranged fruit.
  8. Refrigerate the fruit pizza for at least 2 hours before serving.
