Ingredients

  • 1/2 cup egg whites
  • 1 1/4 cups sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups flaked coconut

Instructions

  1. In a large mixer bowl, beat egg whites until soft mounds form.
  2. Gradually add 1/4 cup sugar and beat until stiff peaks form.
  3. Fold in the remaining 1 cup sugar, along with the flour, salt, vanilla extract, and coconut, carefully, half at a time, until thoroughly blended.
