Ingredients

  • 1 c. flour
  • 1 tsp. salt
  • 2 whole chicken breasts, boned, skinned and sliced
  • oil
  • 1 large onion, chopped
  • 1 stalk celery, sliced
  • 2 to 3 c. chicken broth
  • cornstarch to thicken

Instructions

  1. Combine flour and salt.
  2. Dip chicken in this mixture and brown lightly in oil.
  3. Saute onion and celery with chicken.
  4. Add broth and simmer 1/2 hour, until tender.
  5. Thicken with cornstarch mixed with a small amount of water.
