Juicy chicken breasts are marinated in orange, garlic, and parsley, then fried and baked with raisins, olives, butter, and sherry for a flavorful, Mediterranean-inspired dish.

Ingredients

  • 12 to 18 boneless chicken breasts
  • 1 cup orange juice
  • 1/4 teaspoon garlic flakes
  • 1/4 cup parsley
  • Flour, seasoned with salt and pepper
  • 2 tablespoons white raisins
  • 4 tablespoons small olives
  • 1/4 pound butter
  • 2 ounces dry sherry

Instructions

  1. Combine orange juice, garlic flakes, and parsley to prepare the marinade. Marinate the chicken for a few hours or overnight.
  2. Dip the chicken breasts in seasoned flour and fry until browned, being careful not to overcook.
  3. Remove the chicken from the pan and pour out the excess oil.
  4. Add butter and dry sherry to the pan and heat until glazed.
  5. Stir in the white raisins and small olives.
  6. Bake the chicken in a preheated oven at 375°F for about 25 minutes.
  7. Pour the sauce over the chicken during the last 5 minutes of baking.
