Chicken Breasts Capri

Ingredients

  • 4 whole boned chicken breasts
  • 1/2 c. flour
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 lemon
  • 1/2 c. butter
  • 1 can cream of chicken soup
  • 1/2 c. grated Parmesan cheese
  • 1/3 c. sherry

Instructions

  1. Rub the breasts with the cut lemon, squeezing the lemon as you rub.
  2. Sprinkle
  3. salt
  4. and
  5. pepper over the chicken and coat with flour.
  6. Heat butter in electric skillet to 300° and brown chicken breasts
  7. in
  8. butter.
  9. Mix
  10. the soup, sherry and cheese and
  11. pour over
  12. browned
  13. chicken.
  14. Simmer
  15. at 225° for about 1
  16. hour.* Remove
  17. chicken
  18. to
  19. warm serving platter and spoon
  20. gravy
  21. over chicken.
  22. Garnish with parsley and/or lemon peel roses.
  23. Serves 4.
  24. Serve with wild rice, green vegetable and congealed fruit salad.
