Ingredients

  • 1 Tbsp. vegetable oil
  • 1 lb. chicken thighs or breasts
  • 1 small onion, cut into 1-inch squares
  • 1 medium green or sweet red pepper, cut into 1-inch squares
  • 1 can cream of broccoli soup
  • 3 Tbsp. water
  • 1 Tbsp. soy sauce

Instructions

  1. Cook chicken in a skillet until browned.
  2. Add onions and pepper; cook 5 minutes or until vegetables are tender-crisp.
  3. Stir in soup, water, and soy sauce; heat to boiling, then reduce heat to low.
  4. Cover and simmer 5 minutes or until vegetables are tender.
  5. Serve over rice.
