Ingredients

  • 2 1/4 cups shredded cooked chicken

  • 3 1/4 cups water
  • 2 tablespoons vegetable oil

  • 1 (8 oz.) can tomato sauce

  • 8 medium flour tortillas

Instructions

  1. In large, deep skillet, combine chicken, taco seasonings, and 3/4 cup water.
  2. Bring to a boil; reduce heat and simmer, uncovered, for 10 minutes.
  3. Remove and set aside.
  4. In same skillet, heat oil.
  5. Add rice; sauté until golden.
  6. Add remaining 2 1/2 cups of water, tomato sauce, and lemon pepper.
  7. Bring to a boil.
  8. Reduce heat, cover, and simmer for 20 minutes.
  9. Stir in chicken mixture, chopped tomato, and green onions; blend well.
  10. Heat for 5 minutes.
  11. Place a heaping 1/2 cup filling on each warmed tortilla.
  12. Fold insides and roll to enclose filling.
  13. Place filled burritos, seam side down, on a baking sheet.
  14. Sprinkle with grated Cheddar cheese.
  15. Heat in oven at 350°F for 5 minutes to melt the cheese.
  16. Garnish with salsa or guacamole if desired.
