Ingredients

  • 4 halves chicken breasts, skinned, boned and flattened
  • 8 oz mozzarella cheese
  • 3 ripe tomatoes, sliced
  • 1 cup mushrooms
  • 1 bunch scallions

Instructions

  1. On each piece of chicken, spread pepper, Italian seasoning, and Dijon mustard.
  2. Top each piece of chicken with a slice of cheese; roll up, secure with toothpick, and then coat with flour.
  3. Saute in olive oil or butter over medium heat until golden brown.
  4. Cover with sliced tomatoes, mushrooms, and scallions, then cook slowly until the chicken is tender.
