Chicken Cognac

Ingredients

  • 2 chicken breasts, split
  • 2 Tbsp. milk
  • 1/4 c. biscuit baking mix
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 c. sliced green onions
  • 1 Tbsp. butter or margarine
  • 1 egg yolk
  • 1/2 c. whipping cream
  • 1/4 c. cognac

Instructions

  1. Heat oven to 425°.
  2. Dip chicken pieces in milk; drain.
  3. Mix baking mix, salt and paprika.
  4. Coat chicken.
  5. Place chicken, skin side down, in greased baking pan, 9 x 9 x 2-inch.
  6. Bake 30 minutes; turn chicken.
  7. Bake until chicken is tender, 20 to 30 minutes.
  8. Keep warm.
