Ingredients

  • 1 large fat hen
  • 5 eggs
  • 1 quart sweet milk
  • 3 tablespoons flour
  • cornbread dressing

Instructions

  1. Cook the chicken the day before and take meat from the bones.
  2. Use the chicken stock for preparing the dressing.
  3. Heat the sweet milk to lukewarm.
  4. Stir the beaten eggs into the warm milk.
  5. Mix flour with a little of the broth and add to the milk and eggs mixture.
  6. Stir constantly until the mixture is thick enough to coat a spoon.
  7. Dice the cooked chicken.
  8. Prepare the dressing to your taste.
  9. Layer the dressing in a baking dish, then add a layer of diced chicken.
  10. Pour the custard mixture over the layered ingredients.
  11. Bake at 350°F (175°C) for 45 to 50 minutes until set and golden.
