Chicken Epercurine

Ingredients

  • 12 pieces chicken
  • 3 or 4 onions, cut into small chunks
  • bouillon cubes
  • 1 c. celery
  • 1 1/2 c. mayonnaise
  • 9 Tbsp. soy sauce
  • 1 c. green olives

Instructions

  1. Sear the chicken pieces in oil.
  2. Cut onions into chunks; put them, some water and a couple of bouillon cubes in with the chicken.
  3. Cook until tender (2 hours).
  4. Add the celery.
  5. Mix mayonnaise and soy sauce; set aside.
  6. Add the green olives to chicken after 1 1/2 hours.
  7. Mix in sauce.
  8. Serve over rice.
