A flavorful Latin-inspired chicken escabeche featuring tender chicken marinated in lime juice, topped with onions and pimentos, perfect for a tangy, savory main dish.

Ingredients

  • 1 broiler chicken, cut up
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 8 oz onion slices
  • 6 Tbsp lime juice
  • 1/4 c chicken bouillon
  • 1/4 tsp paprika
  • 1/4 tsp chili powder
  • 1 (4 oz) jar pimentos, drained

Instructions

  1. Sprinkle the chicken with salt and cayenne pepper.
  2. Place half the onion slices in a baking dish.
  3. Arrange the chicken pieces on top of the onions.
  4. Top the chicken with the remaining onion slices.
  5. Combine lime juice, chicken bouillon, paprika, and chili powder; pour over the chicken and onions.
  6. Cover and refrigerate for 2 hours.
  7. Remove from refrigerator 30 minutes before cooking.
  8. Place drained pimentos over the chicken and onions.
  9. Bake, covered, at 325°F for 30 minutes.
  10. Remove the cover and bake for an additional 30 minutes or until the chicken is tender.
