Ingredients

  • quartered chicken or chicken breasts
  • 2 Tbsp. olive or salad oil
  • 2 Tbsp. lemon juice
  • 1/4 cup white dry wine
  • 4 Tbsp. grated cheese
  • 1/4 tsp. oregano
  • 1/4 tsp. sweet basil
  • 1/8 tsp. powdered garlic (optional)
  • 1/2 tsp. pepper

Instructions

  1. Place chicken pieces skin side up in a 13 x 9-inch baking dish.
  2. Pour oil over the chicken pieces.
  3. Combine lemon juice, white wine, grated cheese, oregano, basil, powdered garlic (if using), and pepper, mixing well.
  4. Pour the mixture over the chicken pieces.
  5. Bake in a preheated 350°F oven for 1 hour and 15 minutes or until tender.
  6. Baste the chicken occasionally with pan drippings during baking.
  7. Pour the drippings over the chicken just before serving.
  8. Serve with rice or noodles.
