Curried Couscous Salad

Ingredients

  • 1 lb. chicken
  • 10 oz. couscous
  • 1 red pepper
  • 1 c. shredded carrot
  • 1 c. cooked peas
  • 1/2 c. green onions
  • 1/3 c. raisins
  • 1/3 c. orange juice
  • 1/3 c. red wine vinegar
  • 3 or more tsp. curry powder
  • 1 tsp. Dijon mustard
  • 1/2 c. oil
  • salt

Instructions

  1. Cook the chicken, then cool and dice.
  2. Cook the couscous and let it cool.
  3. Combine cooked chicken, couscous, shredded carrots, cooked peas, diced red pepper, and chopped green onions in a large bowl.
  4. Soak raisins in orange juice, then drain and add them to the couscous mixture, reserving the orange juice.
  5. In a separate bowl, whisk together red wine vinegar, orange juice, curry powder, Dijon mustard, salt, and pepper.
  6. Add oil gradually while whisking or blending until well combined.
  7. Pour the dressing over the couscous mixture and toss to coat.
  8. Chill the salad until ready to serve.
