Ingredients

  • 4 boneless skinless chicken breast halves
  • 2 c. sliced fresh mushrooms
  • 3 garlic cloves, minced
  • 1 tsp. dried basil
  • 1/2 tsp. Italian seasoning
  • 1 jar (28 oz.) meatless spaghetti sauce
  • 1/2 c. red wine or chicken broth
  • Hot cooked angel hair pasta or spaghetti

Instructions

  1. In a nonstick skillet coated with cooking spray, cook chicken for 6 minutes on each side; remove and keep warm.
  2. Add mushrooms, garlic, basil, and Italian seasoning to the skillet; sauté until mushrooms are tender.
  3. Stir in spaghetti sauce and wine or broth.
  4. Return the chicken to the skillet, cover, and simmer for 10 minutes or until heated through.
  5. Serve the chicken and sauce over hot cooked angel hair pasta or spaghetti.
